Recipe of the Week: Chicken Chipotle Soup

Dennis Wagner, saucier at the Grand Traverse Resort and Spa, won the Soup ‘r Bowl competition held during the recent 2013 Traverse City Winter Comedy Arts Festival with his recipe for Chicken Chipotle Soup. Here it is.

Chicken Chipotle Soup

1/2 c. butter

1/2 c. flour

3/4 lb. chicken, diced

1 fresh chipotle pepper

1 roasted red pepper

1 bunch cilantro

1/2 gallon chicken stock, cold

1/2 lb. bacon, cooked and chopped

1/2 c. onions, diced

1/2 c. carrots, diced

1/2 c. celery, diced

1/4 c. heavy cream

Puree peppers with cilantro and set aside. In a large pot, sauté the celery, onions and carrots with the butter, chicken and bacon. Add flour to make a roux. Slowly add chicken stock until you have the desired consistency. Fold in peppers/cilantro puree and cream. Makes about 1 gallon.
