Yvonne Haywood, who works in the Record-Eagle circulation department and is a great cook, was passing these treats around the office the other day and noting how easy they were to make. There are other variations of flourless cookie recipes on the Internet, too. These were crispy and a happy mix of peanut butter and chocolate chips.
Flourless Peanut Butter Chocolate Chip Cookies
1 c. brown sugar
1 c. peanut butter
1 t. vanilla
White chocolate chips or semi-sweet chocolate chips
Heat oven to 350°. Cream brown sugar and peanut butter, then mix in egg and vanilla. Mix in chocolate chips.
Use 1 T. measure to make individual cookies. Arrange on ungreased baking sheets or parchment paper, about 2 inches apart. Bake 10-12 minutes, until golden brown. Makes about 24 cookies.
