If, by some fluke, you still have zucchini left, here's a great recipe that will put it to good use.
Loretta Alberta, of Cedar, got this from Engadine in the Upper Peninsula and says everyone loves it.
Nutty Cheesy Zucchini Pancakes
2 c. grated zucchini
1/2 c. grated sharp cheddar cheese
2/3 c. chopped pecans
1 c. Bisquick
2 eggs
Oil for frying
Sour cream for garnish
Thoroughly mix all ingredients together. Drop by spoonfuls into hot oil and flatten until lightly browned. Makes 8 to 12 pancakes.
