The Epicurean Classic has announced its guest list for this year's event, scheduled for Sept. 11-13 at the Northwestern Michigan College Great Lakes Culinary Institute.

Kim Sunee, author of "Trail of Crumbs," a memoir of her beginnings in South Korea, her childhood in New Orleans and her love affair with a French entrepreneur, will be this year's guest of honor.

Other authors include Joey Altman, "Without Reservations: How to Make Bold, Creative, Flavorful Food at Home"; Joyce Goldstein, "Mediterranean Fresh: A Compendium of One-Plate Salad Meals and Mix-and-Match Dressings"; and Leonardo Curti, "Trattoria Grappolo: Simple Recipes for Traditional Italian Cuisine."

Michigan chefs include Brian Polcyn, author of "Charcuterie: The Craft of Salting, Smoking and Preserving Artisan Foods" and Don Yamauchi, chef at Birmingham's Forté.

Other guests include Bob Paulinski, former proprietor of the Blue Goat and former chief wine and spirits merchant for Sam's Club; Jacquy Pfeiffer, chef and founder of The French Pastry School; and Shawn Loving, chairman of the Schoolcraft College Culinary School and chef for the 2008 U.S. Olympic basketball team.

New this year is the addition of a day pass -- $129 for one day; $229 for both days. Organizers said there will be more than 40 cooking demonstrations, 24 tastings, eight "Great Chef" dinners and three receptions. The opening reception will feature Great Lakes-grown produce, game and wine. A schedule and more information is available at www.epicureanclassic.com.

A reader wanted to know if it would be insulting to a pizza parlor to order "just the crust, fully baked but empty." She said she'd tried premade crusts from the store and found fresh ones much more delicious. We called Paesano's Pizza on East Front Street in Traverse City and they said, "No problem!" A quick poll at Papano's Pizza in Kingsley ended with the same opinion -- order away. No feelings will be hurt.

If you are looking for a specific recipe, have a cooking dilemma -- or have solved one and want to pass on what you learned; had good (or bad) luck with a food product; or have other information of interest to fellow cooks, please send it to: Cook's Corner, Traverse City Record-Eagle, P.O. Box 632, Traverse City, MI 49685.
