Recipe of the Week: Delicious Fall Meatloaf

This recipe for fall meatloaf was submitted by Sally DeWeese of Traverse City. DeWeese, a frequent contributor to the recipe of the week says the meatloaf goes great alongside carrots, mashed potatoes or squash.

Delicious Fall Meatloaf

1 lb. ground turkey

2 lb. ground round

1 medium onion

1 c. quick oats

3 T. applesauce, heaping

2 T. chili sauce

3 T. Italian bread crumbs

3 T. plain bread crumbs

1 T. dry onion soup mix, heaping

1 c. low-fat milk

2 eggs

Salt and pepper

Mix the ingredients into a meat batter and form into a loaf. Place the loaf into a 9-by-13-inch pan and bake for 30 minutes at 375° then for 30 minutes more at 350°.

While the loaf bakes, thin one cup of catsup with water. Pour the mixture over the loaf and bake for another 45 minutes at 325°. When the catsup thickens, cover the pan with foil for the remainder of the cooking time. At this time, you may also add carrots to the pan to finish baking alongside the loaf.
