Lisa Perkins, who works in the Traverse City Record-Eagle newsroom, shared this recipe for lemon-flavored cookies. She acquired it from her aunt, Ruth Shindledecker of Lima, Ohio, and asked for the recipe because they were so good — and, as it turns out, very easy.
Lemon Cake Mix Cookies
1 (18 1/4 oz.) lemon box cake mix
1 (8 oz.) container Cool Whip
Mix all ingredients. Form into balls. Roll in confectioners' sugar. (Note: Dough will be very sticky; it's best to just drop by teaspoonful into powdered sugar and then roll into balls.)
Bake on greased cookie sheet at 350° for 10 to 12 minutes. Cool in pan a few minutes before removing.
(Variation: These cookies can be made with any cake mix for a different flavor.)
