Recipe of the Week: Fruit Cake

This week’s recipe of the week comes from Sally DeWeese of Traverse City.

DeWeese says the recipe makes a great fruit cake.

3 c. cinnamon applesauce

1/2 c. shortening

1/2 c. butter

3/4 c. sugar

3/4 c. brown sugar

1 lb. candied mixed fruit

2 small tubs citron

1 small tub each green and red candied cherries

1 c. rasins

1 c. white raisins

1 c. walnuts

4 c. flour

4 T. baking soda

1/2 t. baking powder

1 t. salt

1/2 t. cloves

1/2 t. alspice

1/4 c. molassas

1 large egg

Bring applesauce, shortening, butter and sugar to boil in a saucepan. Let cool for five minutes. Pour the mixture over the fruit in a large bowl and let stand for 15 minutes.

Add the remaining ingredients to the bowl and mix well.

Pour the batter into loaf pans and bake for 30 minutes at 300° and 30 minutes at 275°. Check with a toothpick.
