The Amish Cook: Canning for later

Even with it being dry our gardens are still producing: tomatoes and sweet corn have been on our menu quite a bit this last while. I need to make some pickles out of the many cucumbers I am getting right now.

The Amish Cook: Sharing haystack supper

We were invited back to their place for a haystack supper in the evening. They had fresh tomatoes so that was a treat since ours are not ripe yet. They served tomato slices with the lunch also. Then for the haystack supper they had the tomatoes diced up. A haystack supper is a layered meal in a bowl. You can use different things.

The Amish Cook: A peaceful house, garden

The house seems quiet and very empty this morning. Joe left for work at 3:45 a.m. after being off work for two weeks. Then, at 6:15 a.m., 14-year-old daughter Elizabeth left for her summer job helping detassle corn. She enjoys the new friends she is making on the job. Elizabeth is tired when she comes home after walking through the cornfields all day. They certainly put in a lot of miles in a day's work.

The Amish Cook: Teeth before chickens

My husband Joe is off for two weeks from the factory. Last week flew by so fast. Joe had oral surgery to have three wisdom teeth cut out.

Amish Cook: Tea from homegrown leaves is sweet

We continue to harvest the tea plants from our gardens. The recipe I am about to share is a good way to put tea up for the winter so it can be enjoyed year-round. Spearmint, peppermint and comfrey are our favorites, but there are quite a few different varieties.

Amish Cook: Strawberries go into coffeecake

I feel unworthy and humbled of all the praise and kind words from you readers. My editor, Kevin Williams, has put in so much work into this column already, sacrificing a lot of time and patience for very little in return. Kevin seems like a brother to me after all these years. I remember meeting Kevin way back when I was 19. A lot has happened in these last 18 years but, whenever possible, Kevin helps out our family.

Amish Cook: Guardian angel keeps me safe

A friend once told me I have a guardian angel in the late Elizabeth Coblentz, the original Amish Cook columnist. Time was when I might have cynically dismissed such notions, but after this past week, I'm not so sure. It wasn't one thing, but rather a collection of smaller happenings. The same friend told me that, in life, there are no coincidences. Maybe she's right.

We are having nice rains. This has helped the garden grow. Everything looks like it is doing very well. I planted my third patch of corn and it was up in less than a week.

Amish Cook: Fishing is in the future

Last week, I had a nice birthday. My husband Joe and the children surprised me with a Dairy Queen ice cream cake. They had a "3" and "7" candle on it so I only had to blow out two candles. For my birthday gift Joe got me a fishing licensing, fishing pole and a life jacket. This is the first fishing license I have ever had.

Amish Cook: Birthdays mean memories

May 22 was my 37th birthday. During the afternoon I got a nice birthday surprise: I went out to the garden and discovered we have radishes and green onions ready to eat. Yum!

Amish Cook: Ordered trees arrive

Our children were excited when the trees that I had ordered arrived. One is an Empress tree, which is one of the fastest-growing trees in North America. They can grow 12 feet or more in a year reaching a maturity height of 35 to 40 feet. The other two are shrubs. One is an apple blossom and the other is an icicle. It will be interesting to see how well they will grow. We have a lot of trees but none like these.

Amish Cook: Rhubarb makes a very tangy juice

Asparagus is on the menu and rhubarb is taking over. I canned some more rhubarb juice last week. I made up my own rhubarb juice recipe, which I will share with you. I made a few changes to it this year which I like even better than the one I had last year. This is a good tart, tangy juice, but delicious!

Amish Cook: Daughter takes her turn

I am giving Mom a break during this busy spring season of readying the garden. The first garden goodies are already coming up. We have peas, lettuce, radishes, onions and potatoes planted. We were going to plant more on Friday but it rained and the garden was too wet.

Amish Cook: Family pays visit to school

With Joe being off on Friday and it being too wet to plant more in the garden, we decided to take the day off and visit school. The local public school encourages parents to come visit and see how the children are doing in their studies. Joe and I along with Elizabeth, and our two youngest, Lovina and Kevin, all went to the school to visit.
